Put fresh summer cherries to use for this Homemade Cherry Garcia Ice Cream! This cherry Garcia ice cream recipe can be made with an ice cream maker or as no-churn ice cream. Both ways are best and yield a creamy copycat of a classic. 

What is the Difference Between Churned and No Churn Ice Cream?

Churned Ice Cream

This is the most common and traditional way of making ice cream by using cream, milk, sugar, and eggs. This is the key to creating the luscious, rich, and silky flavor of ice cream.

By following this method, you will prevent ice crystals from forming and also incorporate air which will create that silky, smooth, and creamy texture.

What if you have no ice cream maker? No problem! you can make your own churned ice cream with some extra time and attention.

No – Churn Ice Cream

This is an easier and less technical way of making ice cream but it will also produce a creamy, delicious, and flavored ice cream. You can use sweetened condensed milk to make a creamy texture in the absence of custard and churning. 

Ingredients for Churned Cherry Garcia Ice Cream Recipe

Fresh Cherries: If fresh cherries are available, use them for authentic taste and flavor. Otherwise, you can make it with frozen cherries.

Chocolate Chips: You can use chocolate chips, dark milk, chunks, semi-sweet, or whatever you like.

Heavy whipping cream: You need heavy whipping cream, sugar, whole milk, and homemade ice cream staples.

Lemon Juice: Lemon juice is needed for adding acidity to your cherries while they cook down. 

Egg Yolks: Use egg yolks for the custard but don’t throw out those whites to make some meringue cookies.

Note: Just swap the whole milk and egg yolks for sweetened condensed milk, for the no-churn ice cream.

How to make Churned Cherry Garcia Ice Cream?

Place the churn of the ice cream maker in the freezer.

Prepare Cherries

Pit the cherries and divide 1 lb and ½ lb.

In a small saucepan, add 1 lb of pitted cherries and add ¼ cup of sugar. Let sit it for 30 minutes to release its liquids.

Roughly chop ½ lb of cherries and set aside.

Make the Custard Base

Prepare the ice bath by setting ice in a large bowl. 

Place a medium-sized bowl on the ice.

Add milk to a 3-quart pot and heat on medium to low flame, Stir it regularly.

Whisk egg yolks with 1 cup sugar.

When milk is heated to 195 degrees F, add it to the whisked eggs and sugar.

Transfer the mixture back to the pan and cook continuously until it is thickened. Whisk constantly to avoid clumps otherwise, you will scramble your eggs.

Strain custard into the medium bowl in the ice bath. Cover it with plastic and cool in the fridge for 2 hours.

Prepare the Cherry Sauce

Add lemon juice to the cherries and cook them over medium heat, until the syrup begins to form from the cherry juice.

Put cherries into a sieve bowl to separate cooked cherries from cherry sauce and set aside both.

Make Ice Cream

Add heavy whipped cream, vanilla extract, cherry sauce, and a pinch of salt to the custard once it has cooled.

Stir it well until it becomes smooth and consistent.

Add the mixture to the chilled churn of the ice cream maker.

Set the machine to churn for 20 minutes until the mixture has a soft serve consistency.

Add cooked cherries, chopped cherries, and chocolate chips to churn and churn for 15 minutes more.

Transfer the ice cream to a bowl, cover it with plastic wrap, and freeze it for 3-4 hours.

How to Make No Churn Ice Cream?

Prepare the cherries sauce.

Whip heavy whipping cream until it becomes smooth and soft.

Fold it in sweetened condensed milk and cherry sauce.

Now fold it in the rest of the whole cherries, cooked cherries, and chocolate chips.

Add the mixture to a loaf pan to freeze.

Note: Whichever method you follow, you will get a sweet and delicious flavor.
