Shepherdless Pie Recipe with The Mashed Potato Topping

Origin of Shepherd’s Pie

Both British and Irish claim the origin of this delectable pie, but no one knows the exact origin of this mashed potato crust dish. Some people believed that it might have originated from the cottage pie. Cottage pie is a similar dish from the mid-19th century with different types of meat in the filling.

Ingredients for Shepherdless Pie Recipe 

Red Onions

Garlic Cloves

Medium-sized Carrot 

Medium-sized Parsnip

Fine Green Beans

Tins of Cooked Lentils

Cooking Oil

Sea Salt

Tins of Chopped Tomatoes

Black Pepper

Smoked Paprika

Bay Leaves

Maple Syrup

Tamari/Soy sauce

A few sprigs of flat-leaf Parsley

Potatoes

Olive Oil

Non-dairy Milk

Instructions

Prepare the Ingredients

Peel and chop the onions and garlic cloves.

Finely slice the parsnip and carrot.

Cut the fine green beans into small pieces.

Drain and rinse the lentils.

Cooking Procedure – Prepare the filling

Add cooking oil to a large pan and place it over the high heat. 

Add the onions and garlic to the pan and cook for almost 2 minutes.

Add the drained lentils to the pan and mix thoroughly.

Add the chopped tomatoes, smoked paprika, soy sauce/tamari, bay leaves, maple syrup, and black pepper.

Bring the mixture to the boil.

Now lower the heat and add parsley and green beans. 

Leave to simmer.

Preheat your oven to 400°F/200°C.

Cooking Procedure – Prepare the topping

Wash and chop the potatoes into small pieces.

Put them into the boiling water and then leave to simmer on medium heat until tender.

Drain the potatoes and mash them.

Add the oil and milk (non-dairy) until you obtain the right texture (smooth, not sloppy).

At the end, season the potatoes with salt and pepper.

Cooking Procedure – Bake the Shepherdless Pie

Pour the lentil mixture into a lasagna-type casserole dish for baking.

Don’t forget to top the mixture with mashed potatoes.

Bake the Shepherdless Pie for 20-30 minutes in the preheated oven. 

Remove the pie from the oven when the potatoes turn golden and crispy.

  • While cooking onion and garlic, stir regularly to avoid burning.
  • While the mixture is simmering, check that the mixture is not sticking to the pan.
